Sour
Why would anyone eat unripe fruit? Yet Planchonella obovata, mangoes, guavas, papayas, bananas, tamarind, wild grapes, jujube, star gooseberries, santol, ambarella, madan fruit, and bilimbi are some of the fruit eaten either green or pickled, in Cambodia. All that's needed is some chilli, salt, sugar, MSG... and you're good to go!
