Caviar it is not--but do Cambodians really care??
In a country where fish is daily fare, and where they are caught--legally or otherwise--sorted, processed, and sold every day of the year, Cambodia’s freshwater fish are given little opportunity to reproduce and multiply.
Witness the quantity of fish eggs sold in local markets (which, for the most part, end up fried and eaten together with duck eggs), and it’s obvious why freshwater fish stocks in Cambodia are on the decline.
