Water Hyacinth

This notorious weed, known to clog waterways and suffocate fisheries, is not only edible in part--the flowers--but is also abundant, and a valuable source of income exploited by many of the lakeside inhabitants and those living on the Tonle Sap, itself. Cambodians braid the cut, dried stems into hammocks--somewhat of a dying tradition now--and also weave them into sandals, handbags, hot pads, coasters, bins, baskets, mats, and other useful items.
