Although not as common or varied as one would find closer to the sea, say, in Phnom Penh or Sihanoukville—where sea turtles, shark’s fins and stingrays are not an uncommon sight—the roads are much better than they used to be, so Siem Reap markets do boast a reasonable variety of salt-water fare, these days.
