Make no mistake; when it comes to animal protein, Cambodians take meat-eating to another level. They don’t just shop for beef, pork, duck, chicken, or fish. No; in this country, if it moves it’s edible. They are kind of like the Chinese, of whom it is said, quite rightly, eat everything that flies--except airplanes; and, everything with legs--except tables and chairs... That, of course, includes bat--just one of the countless seasonal delicacies that add colour and taste to some of the local markets.
